- Dry Ingredients:
¾ cup oat flour (take 1 cup whole oats, grind in food processor or magic bullet it makes ¾ cup oat flour or buy oat flour Bobs Redmill is one brand that I use)
½ cup whole wheat pastry flour (much finer grind than regular whole wheat flour)
1 scoop vanilla protein powder (low fat low carb)
1 1/2 tsp baking powder
1 tbsp ( or more!) pumpkin pie spice
1 T hemp powder
pinch salt
Wet Ingredients
8 egg whites (at room temp makes for a fluffier pancake)
1 cup cottage cheese (can be fat free or low fat)
1 cup canned pumpkin puree
¼ cup fat free Greek yogurt ( optional)
1 tsp vanilla extract
