Ingredients
- 1 onion, chopped (use 1/2 onion is fine, too)
~10 garlic cloves (half of them diced, half of them whole)
olive oil or butter
chicken stock (bouillon is fine)
yellow rice (I like Viggo's saffron yellow rice in the shiny yellow bag. If you can't find yellow rice just use a box of Spanish rice).
water (see rice instructions for the right amount)
1 can of diced tomatoes (with cilantro/lime or italian/mexican seasoning)
1 can of black beans
1 or 2 chicken breasts, cubed and cooked with cumin, cayanne/chili powder, salt & pepper
sour cream (Mexican!!)
avocado (sliced)
cilantro (torn)
