Mushroom Ragu Over Spinach Lasagna

Ingredients

    1 oz porcini dried mushrooms
    2 T x virgin olive oil
    1 medium chopped onion
    2 large carrots finely chopped
    1 stalk celery finely chopped
    4 cloves of garlic finely chopped
    2 T tomato paste
    2 portabello mushroom caps, chopped
    1/2 lb shitake mushrooms, stems removed, chopped
    Dynamite Salt and freshly ground pepper to taste
    2 28 oz cans whole San Marzano tomatoes, crushed by hand
    3 bay leaves
    1/4 cup chopped fresh parsley

    FOR THE LASAGNA:
    12 oz dried lasagna gluten free noodles
    1/2 tsp freshly grated nutmeg
    1 pound frozen chopped spinach
    2 large beaten eggs
    2 pounds lowfat ricotta cheese
    8 oz shredded asiago cheese
    1 1/2 pounds oart skim shredded mozarella
    3 oz grated parmesan cheese

Description

Totally Awesome Does Not Barely Describe It :) A Bit Higher On Protein Because Of The Cheese, So Needs To Be Added In To A Light Week And Served With SALAD And Dressing And Carrot Sticks On The Side!!
