Rice Pilaf With Nuts

Ingredients

    2 tbsp olive oil
    1 Yellow onion peeled and chopped
    1 fat carrot shredded
    1 Large firm zucchini graded
    1 clove of garlic passed through a press
    2 Tsp Coriander
    1 cup brown basmati rice (soak for an hour before using)
    2 c low sodium chicken or veggie stock
    1/2 cupunsalted cashew
    pinch ground black pepper
