Vegan Carrot And Hazlenut Roast

    450g carrots, scrubbed and sliced
    1 medium onion, finely chopped
    1 clove garlic, crushed
    100g mushrooms, chopped
    1 tbsp olive oil
    1 small or 1/2 large red pepper, diced
    1 tsp fresh, or 1/2 tsp dried rosemary, chopped
    1 tsp nutmeg
    1/2 tsp paprika
    25g vegan margarine
    175g hazelnuts toasted and ground
    100g fresh, wholemeal breadcrumbs
    1 tbsp Soya flour
    1 tbsp arrowroot
    1 tbsp freshly squeezed lemon juice
    black pepper and salt
