Quinoa, Black Bean, Pico And Guac

Ingredients

    1/2 cup quinoa
    1 cup veg stock or water
    1 cup black beans
    prepared pico del gallo (however much you want) or just chopped tomato, onion, cilantro and jalapeno
    1/4 cup prepared guacamole or regular diced avocado
    lime juice to taste (maybe 1/4 cup?)

    Rinse and drain quinoa. Cook with broth or water as you would rice, 15-20 minutes. Fluff w/ a fork, allow to cool. Mix in remaining ingredients. Serves two
