Savannah-style Crab Soup

Ingredients

  • 1/2 cup all-purpose flour
  • 1 tablespoon butter
  • Cooking spray
  • 2 cups chopped carrot
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1/4 cup chopped red bell pepper
  • 1/4 cup chopped green bell pepper
  • 1 garlic clove, minced
  • 1 tablespoon Old Bay seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 1 bay leaf
  • 4 cups clam juice
  • 1 1/2 cups whole milk
  • 1/2 cup half-and-half
  • 1 pound lump crabmeat, shell pieces removed
  • 1/3 cup dry sherry

Description

If The Flour Starts To Brown Too Quickly, Remove The Skillet From The Heat And Stir The Flour Constantly Until It Cools.
