Winter Borscht

Ingredients

  • 1 pound boneless beef chuck, cut into 1-inch cubes
  • 1/2 pound boiled or baked ham, cut into 1-inch cubes
  • 6 ounces kielbasa, cut into 1-inch cubes
  • 2 (32-ounce) boxes beef broth
  • 2 California bay leaves
  • 1/4 teaspoon salt
  • 12 black peppercorns or 1 teaspoon freshly ground pepper
  • 4 medium leeks, trimmed, washed, and thinly sliced
  • 3 (14.5-ounce) cans sliced beets, with liquid, divided
  • 2 large carrots, coarsely chopped
  • 2 large parsnips, coarsely chopped
  • 2 celery ribs, thinly sliced
  • 2 large garlic cloves, coarsely chopped
  • 1 (15-ounce) can diced tomatoes in sauce
  • 4 cups 1-inch cabbage chunks
  • 1/3 cup coarsely chopped flat-leaf parsley
  • 1 cup sour cream
