1 thick side of salmon fillet, bones removed, skin left on 2 tablespoon dark rum Snowy's Secret Rub 1 tablespoon soft brown sugar 1 tablespoon Cajun Spice (see recipe below) 1 tablespoon salt flakes 1 tablespoon tomato sauce 1 tablespoon low-salt soy sauce Hickory wood chunks soaked over night Cajun Spice Mix 500 ml sunflower oil 1 large onion, finely sliced 10 garlic cloves, finely sliced 1 tablespoon cayenne pepper 1 tablespoon smoked paprika 1 tablespoon celery salt 1 tablespoon dried thyme 1 teaspoon fennel seeds
