Crust 1 Flaky Pie Crust , sugar omitted, doubled if you’re making a two-crust pie Poultry 4 cups shredded cooked chicken or turkey Sauce 3 Tbsp. unsalted butter ½ cup flour 1½ cups chicken or turkey stock 1½ cups whole milk (a mixture of milk, half-and-half, and/or cream is fine) ¼ cup dry wine or sherry 1 Tbsp. lemon juice ~ Salt and freshly ground pepper, to taste ½ tsp. freshly ground nutmeg, or to taste Vegetables 2 Tbsp. oil and/or butter 1 medium onion, diced 1 large carrot, diced 3 celery stalks, diced 2 cups crimini mushrooms, sliced 3 cloves garlic, minced ½ cup frozen peas, thawed ~ Dried or fresh herbs, such as parsley, thyme, tarragon, etc.
