3 cups radicchio trevisano, coarsely shredded
1 cup chicken stock
½ cup Parmigiano-Reggiano
Salt and freshly ground pepper, to taste

For This Dish, Radicchio Trevisano, The Long Red Radicchio, Is Ideal. Round Cabbage, Like Radicchio Di Chioggia, Which Is Easier To Find Is A Fair Substitute, But It Will Not Give You The Same Intensity Of Flavor That The Trevisano Will.
