2 cups (500 mL) chicken stock 1 1/2 cups (375 mL) couscous 1 large red pepper 4 oz (125 g) oyster mushrooms 2 tbsp (25 mL) butter 1/2 cup (125 mL) chopped mint 1/3 cup (75 mL) snipped chives 2 tbsp (25 mL) lemon juice 1/4 tsp (1 mL) salt, if needed 1/2 cup (125 mL) toasted pine nuts
