Chicken With Beet And Fennel Salad Recipe

Ingredients

  • 1 x golden brown beet
  • 1 x Chioggia beet (see note)
  • 1/2 x fennel bulb
  • 2 tsp extra virgin olive oil
  • 1/2 tsp finely grated orange zest
  • 1 Tbsp. fresh orange juice
  • 2 tsp snipped fresh chives
  • 1 tsp minced fresh chervil
  •     Chervil sprigs for garnish (optional)
  • 4 x boneless, skinless chicken breast halves
  • 1 Tbsp. vegetable oil, plus more as needed
  •     Kosher salt and freshly grnd pepper to taste
  • 1/4 c. finely minced shallots
  • 1/2 c. dry white wine
  • 1/4 c. apple cider vinegar
  • 2 c. chicken stock or possibly broth
  • 1/4 c. creme fraiche
