Kung Pao Rice With Edamame Recipe

Ingredients

  • 1 Tbsp. peanut oil
  • 1 med red onion cut 1" pcs
  • 1 sm red bell pepper seeded, and
  •     cut in 1" pcs
  • 8 x baby carrots halved lengthwise
  • 2 x garlic cloves chopped
  • 1 piece fresh ginger - (1" long) chopped
  • 1 1/2 c. frzn shelled edamame thawed
  • 12 sm ears canned baby corn
  • 5 c. cooked brown or possibly white basmati rice
  • 3 Tbsp. orange juice
  • 1 Tbsp. cornstarch
  • 2 tsp grated orange peel
  • 1 tsp sugar
  • 1 tsp salt
  • 1/4 tsp red pepper flakes or possibly to taste
  • 1/4 tsp freshly-grnd black pepper
  • 1/2 tsp toasted sesame oil
