  • 1 x Cucumber, peeled if waxed, and seeded
  • 1 x Zucchini, with ends trimmed
  • 2 x Green onions, trimmed
  • 1/2 lrg Green bell pepper
  • 1/4 c. Minced cilantro
  • 1/2 tsp Salt
  • 1/4 tsp White pepper
  • 1 c. Chicken broth
  • 1 Tbsp. Extra virgin extra virgin olive oil
  • 3 Tbsp. Cider vinegar
  • 1 lrg Tomato, coarsely minced
  • 1 c. Yogurt, (optional)
