Carbonnade Flamande Recipe

Ingredients

  • 4 Tbsp. Unsalted butter
  • 1 lb Onions sliced
  • 2 lb Lean beef, shoulder or possibly round cut 1/4" thk slices
  • 2 tsp Brown sugar
  • 3 Tbsp. Flour
  • 1 Tbsp. Dijon mustard
  • 2 c. Dark beer, preferably Liefman's Goudenband
  • 1 c. Beef stock
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1 x Bay leaf
  • 2 tsp Mixed dry herbs crumbled
