Bombay Madness Recipe

Ingredients

  • 4 x Steaks, filet, 1-inch thick
  •     Pepper, white, cracked
  • 1 x Lemon grass, stalk, minced Or possibly
  • 1 bn Lemon thyme Or possibly
  • 2 x Peel, lemon, minced
  • 1 x Ginger, 1-inch piece thinly sliced
  • 20 x Peppercorns, black, crushed
  • 1/4 lb Butter, unsalted
  • 2 x Ginger, thin slices, minced
  • 1 lrg Shallot, minced
  • 1 sm Garlic, clove, minced
  • 1 sm Chili, green, seeded and minced
  • 1 Tbsp. Garam Masala (see any
  • 1 Tbsp. Curry, pwdr (If Garam Masala is not available, use 2 tb of Curry pwdr)
  • 1 Tbsp. Juice, lemon
  • 1 pch Turmeric, grnd
  •     Salt (to taste)
  •     Pepper (to taste)
  •     Onions, pickled
  •     Cucumbers in yogurt and creme fraiche
  •     Mint chutney
  •     Papaya, sliced
  •     Banana, sliced
  •     Other garnishes of choice
