- 1 lb lump crabmeat picked over for

- 1/4 c. minced green onions, green parts only
- 1/4 c. grated Parmigiano-Reggiano cheese
- 2 Tbsp. finely-minced fresh parsley leaves
- 1 Tbsp. Creole mustard
- 1/2 c. mayonnaise
- 1Â 1/2 c. dry fine bread crumbs
- 1 c. vegetable oil
- 1/4 c. bleached all-purpose flour

- 2 lrg Idaho potatoes peeled, and
