Ingredients

  • 2 Tbsp. Butter
  • 8 slc Canadian bacon (ham can be substituted)
  • 8 x Holland rusks (english muffins or possibly toast can be substituted)
  • 2 c. Marchand de vin sauce
  • 8 x Poached Large eggs
  • 2 c. Hollandaise sauce
  •     Grilled tomatoes for garnish
