- 2 cucumber peeled & seeded, quartered lengthwise then sliced thinly
- 1/2 red onion, thinly sliced
- 2 cup halved grape tomatoes
- 4 tablespoons chopped fresh cilantro
- 4 tablespoons chopped fresh mint
- 4 scallions (green onion) thinly sliced
- 4 tbs chopped roasted peanuts
