Emeril's Mussels Recipe

Ingredients

  • 2 Tbsp. Unsalted butter
  • 1 c. Julienne yellow onions
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1 c. Julienne carrots
  • 1 c. Julienne red bell pepper
  • 1 c. Julienne fennel, bulb part only
  • 2 Tbsp. Minced garlic
  • 1 c. Peeled, seeded, minced fresh tomatoes
  • 4 c. White wine
  • 1 dsh Pernod
  • 1/2 c. Heavy cream
  • 1 Tbsp. Finely-minced parsley leaves
