- 2 lrg Yellow onions, coarsely minced
- 4 x Scallions, coarsely minced
- 3 x Habanero peppers or possibly jalapeno peppers, stemmed & seeded
- 3 Tbsp. Fresh gingerroot, peeled & grated
- 6 x Cloves garlic, coarsely minced
- 2 Tbsp. Fresh thyme, finely minced
- 1/2 c. Red wine vinegar
- 3 Tbsp. Light brown sugar
- 1/4 tsp Cinnamon
- 1/4 tsp Grnd nutmeg, freshly grnd
- 1 pch Grnd cloves
- 2 tsp Grnd allspice
- 2 Tbsp. Fresh lime juice
- 8 x Chicken thighs, boned & skinned
