  • 1 x Live Maine lobster, 2.5-lb
  • 1 quart Clam juice
  • 1 x Bay leaf
  • 1/2 c. Diced celery
  • 2 Tbsp. Raw rice
  • 1 Tbsp. Dehydrated vegetable flakes
  • 1/2 c. Light cream
  • 1/8 tsp Cayenne pepper
  •     Excellent-quality dry sherry
  • 1 quart FISH STOCK:
  • 1/2 lb Onions, sliced
  • 1 x Carrot, sliced
  • 6 sprg parsley, (approx.)
  • 1 x Lemon, juice of
  • 4 lb Raw white fish trimmings & bones, minced
