- 1 c. pitted dates cut-up:6 ounce. packed
- 1Â 3/4 c. dry apples cut-up:6 ounce. packed
- 1 c. seedless raisins 5 ounce packed
- 1 c. golden brown raisins 5 ounce packed
- 2Â 1/2 ounce dry currants 1/2c packed
- 1/2 c. candied yellow pineapple minced (optional)
- 1 c. dark rum or possibly brandy
- Â Â solid shortening
- Â Â butter flavored no stick cooking spray
- 1 lrg egg
- 3 whl egg whites
- 1Â 3/4 c. light brown sugar packed
- 1/2 c. canola oil or possibly safflower oil
- 1/2 c. honey
- 1/3 c. apple juice or possibly orange juice
- 2 c. unsweetened applesauce
- 2 tsp vanilla
- 2 Tbsp. grated orange peel
- Â Â or possibly 1/2 tsp pure orange oil or possibly extract
- 2Â 1/4 c. all-purpose flour unsifted
- 1 c. whole wheat pastry flour unsifted
- Â Â or possibly use all all-purpose flour
- 1Â 1/2 tsp baking pwdr
- 1/2 tsp baking soda
- 3/4 tsp salt
- 1Â 1/2 tsp cinnamon
- 1 tsp nutmeg
- 1/2 tsp grnd cloves
- 1/3 c. wheat germ
- Â Â Dark rum or possibly brandy for soaking cakes optional
- 2 x recipes Vanilla Icing Glaze
- Â Â pecan or possibly walnut halves optional
- Â Â or possibly blanched whole almonds optional
- 1 c. confectioner's sugar
- 1Â 1/2 Tbsp. apple juice up to 2 Tbsp.
- Â Â or possibly strained orange juice dark rum,
- Â Â or possibly brandy
- 1/4 tsp vanilla extract
