Stuffed Winter Squash Recipe

Ingredients

  • 2 lrg acorn squash
  •     or possibly small butternut squash
  •     Salt and pepper to taste
  • 1 x 6 ounce pkg wild rice
  • 4 c. vegetable stock or possibly water
  • 1 Tbsp. butter or possibly oil
  • 8 ounce mushrooms sliced
  •     (mix domestic and wild mushrooms)
  • 1 c. minced onions
  • 1 stalk celery rib finely minced
  • 1/2 c. toasted mixed nuts coarsely minced
  •     (pine-, hazel-, walnuts or possibly pecans)
  • 2 Tbsp. minced parsley
  • 2 Tbsp. minced fresh mixed herbs
  •     (thyme, chives or possibly marjoram)
  • 1 whl egg and
  • 1 x egg white
