Mango Lapsang Chicken With Herb Salad And Honey Dressing Recipe

Ingredients

  • 1/2 x cooked chicken cut in half
  • 3 Tbsp. lapsang souchong tea leaves
  • 3 Tbsp. brown sugar
  • 3 Tbsp. uncooked rice
  • 3 Tbsp. rice vinegar
  • 1 x juice of 1 lemon
  • 1 1/2 Tbsp. caster sugar
  • 1 clv garlic crushed
  • 1 x birds eye chilli very finely minced
  • 1 x bowlful shredded chicory cucumber beansprouts or possibly baby spinach
  • 4 x spring onions or possibly 1 bunch chives trimmed and minced
  • 2 x handfuls coriander mint and basil leaves
  • 2 lrg hard mangoes peeled and cut into waferthin slices
  • 1 Tbsp. black (or possibly white) sesame seeds toasted in a dry frying pan
  •     honey dressing:
  • 5 Tbsp. clear honey
  • 3 Tbsp. rice vinegar
  • 120 ml groundnut oil
  • 2 tsp sesame oil
