Grilled Chicken, Creamy Grits, Shiitake Mushroom Sauce Recipe

Ingredients

  • 1/4 c. extra virgin olive oil
  • 1 Tbsp. minced garlic
  • 1 Tbsp. minced fresh rosemary
  • 1 sm fryer chicken - (abt 3 lbs) quartered
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1 c. beef stock or possibly canned beef broth
  • 1 c. chicken stock
  •     (or possibly canned low-salt chicken broth)
  • 1/2 c. dry white wine
  • 3 ounce thinly-sliced pancetta cut into
  •     matchstick-size strips
  • 8 ounce fresh shiitake mushrooms stemmed, sliced
  • 3/4 c. whipping cream
  • 1 Tbsp. thinly-sliced fresh sage leaves
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
