  • 1/4 c. all-purpose flour
  • 1/4 c. plain dry breadcrumbs
  • 5 1/2 ounce soft fresh goat cheese log (Montrachet) cut 4 equal rounds,
  •     and chilled
  • 1 lrg egg beaten to blend
  • 3 Tbsp. coarsely-minced hazelnuts
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. grated orange peel
  • 1 Tbsp. frzn orange juice concentrate thawed
  • 1/4 c. extra virgin olive oil
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1 lrg bunch watercress stems trimmed
  • 1 lrg Belgian endive head sliced thin
  •     lengthwise
