  • 6 ounce larding pork cut 1/2" strips
  • 2/3 c. chopped onion
  • 1 tsp grated lemon rind
  • 1/2 tsp allspice
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 3 c. dry red wine
  • 1 1/2 c. water
  • 2 Tbsp. lemon juice
  • 1 c. chopped onion
  • 12 x peppercorns
  • 2 x bay leaves
  • 6 x cloves
  •     Flour for dredging meat
  • 2 Tbsp. vegetable oil
  • 2 Tbsp. butter
  • 2 x carrots sliced thin
  • 2 lrg onions sliced thin
  • 2 Tbsp. tomato paste
  • 2 Tbsp. sugar
  • 1/4 c. seedless raisins
  • 6 x gingersnaps or possibly pfeffernuse crumbled
  • 3 Tbsp. flour
