Spring Vegetable Salad Recipe

Ingredients

  • 1/4 lb baby carrots
  • 1/2 lb fresh green beans
  •     as slender as possible
  • 1/2 lb snow peas
  • 8 sm red potatoes, up to 10
  • 1 sm head cauliflower
  • 1 sm yellow summer squash, (1 to 2)
  • 1/2 lb asparagus
  •     pencil thin if possible
  • 2 med clove garlic, chopped, up to 3
  • 1/4 c. extra virgin extra virgin olive oil
  • 1 tsp salt
  •     black pepper, to taste
  • 4 Tbsp. mayonnaise, (optional), up to 5
  •     Chopped fresh basil
  •     Chopped fresh tarragon
  •     Chopped fresh marjoram
  •     Chopped fresh dill
  •     Chopped fresh chives
  • 1/2 c. fresh lemon juice
