Ingredients

  • 4 med potatoes - (to 5) minced
  • 3 c. reserved potato stock
  • 2 c. additional water - (to 3 c.)
  • 1 1/2 c. unbleached flour
  •     Cooking spray (optional)
  • 4 x celery stalks minced
  • 2 x leeks finely sliced
  • 1 med white onion minced
  • 1 x green bell pepper - (to 2) minced
  • 1/4 tsp salt
  • 1 Tbsp. sugar
  • 1/2 Tbsp. thyme
  • 4 x bay leaves
  • 1/2 Tbsp. freshly-grnd black pepper
  • 4 tsp chicken base or possibly bouillon
  • 1/2 c. dry sherry
  • 4 can minced clams reserve liquid
  • 2 can evaporated nonfat skim lowfat milk (12 ounce.)
  • 1/4 tsp Tabasco (optional)
