Ingredients

  • 2 1/2 c. basmati rice
  • 2 Tbsp. butter
  • 4 c. chicken stock
  • 2 tsp salt
  • 3 x cardamom, pods
  • 2 x star anise
  •     cinnamon, stick
  •     Chicken
  • 1/4 c. vegetable oil
  • 2 lb boneless skinless chicken, thighs, cubed
  • 3 x onion, sliced
  • 2 clv garlic, chopped
  • 1 Tbsp. fresh ginger, chopped
  • 2 tsp salt
  • 1 1/2 tsp grnd cumin
  • 1 1/2 tsp grnd nutmeg
  • 1 tsp cinnamon
  • 1 tsp curry paste
  • 1 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1 c. plain full fat lowfat yoghurt
  • 1 c. whipping cream
  •     Garnish
  • 2 Tbsp. vegetable oil
  • 1/2 c. slivered blanched almonds
  • 1/2 c. cashew
  • 2 x onion, sliced
  • 1/4 c. minced fresh mint
  • 2 x green warm pepper, seeded, and, chopped, (such as jalapenos)
  • 1/2 c. lowfat milk
  • 2 tsp saffron
  • 1/4 c. butter, melted
