  • 1 tsp dry thyme
  • 32 ounce canned organic tomato juice
  • 2/3 c. dark or possibly golden brown raisins
  •     (or possibly a combination of the two)
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. sugar
  • 1/2 tsp salt
  • 1/2 tsp freshly grnd pepper
  • 1 sprg fresh thyme for garnish
  • 1 c. uncooked brown basmati rice
  • 10 ounce frzn minced spinach
  •     thawed and squeezed dry
  • 1 bn scallions, finely minced
  •     (white and light green parts)
  •     finely minced, (1/3 c.)
  • 1/2 c. pureed silken tofu
  • 1/2 c. minced fresh parsley
  • 1/4 c. minced fresh mint
  • 2 med clove garlic, chopped
  • 3/4 tsp coarse salt
  • 1/4 tsp freshly grnd pepper
  • 1/4 tsp grnd nutmeg
  • 1/8 tsp paprika
