Roast Fresh Ham, Tudor Style Recipe

Ingredients

  • 1 x Fresh ham or possibly fresh pork shoulder, whole or possibly half,
  •     Bone in or possibly boneless
  • 2 lrg Onions, minced
  • 2 lrg Carrots, minced
  • 2 stalk celery, including leaves, minced
  • 3 x Cloves garlic, minced
  • 1 tsp Brown caraway seeds
  • 1 tsp Black caraway seeds (if not available, use brown)
  • 1 tsp Celery seed
  • 2 tsp Grnd cinnamon
  • 1/2 tsp Grnd cloves, or possibly 1 tsp. whole cloves
  • 1 Tbsp. Whole allspice, or possibly 1 tsp. grnd allspice
  • 1 Tbsp. Grated orange zest
  • 1 Tbsp. Black peppercorns
  • 1 lrg Bay leaf
  •     Salt, to taste (optional)
  • 1 1/2 c. Red table wine
  • 1/2 c. Red wine vinegar
  • 1/2 c. Extra virgin olive oil
  • 1/2 c. Cognac (optional)
