- 1 med red onion, minced
- 1 lrg red bell pepper, seeded & diced
- 8 ounce white button mushrooms, thickly sliced
- 4 ounce cremini mushrooms, thickly sliced
- 2 x cloves garlic, chopped
- 1Â 1/2 c. arborio rice
- 4 c. vegetable stock, simmering
- 1/2 c. dry white wine
- 1Â 1/2 Tbsp. dry parsley, or possibly 3 tbsp. fresh
- 1/2 tsp salt
- 1/2 tsp pepper
- 10 x asparagus spears, trim & cut in 1" pc.
- 1/4 c. grated parmesan cheese, or possibly more
