Tortilla Soup Cancun Style Recipe

Ingredients

  • 1 med Frying chicken, cut up
  • 1/2 med Onion, rough minced
  • 1 tsp Garlic puree
  • 2 Tbsp. Vegetable Oil
  • 6 c. Water
  • 2 can Swanson's chicken broth
  • 1 x Anaheim pepper, seeded, rough chop
  • 1 x Hungarian Wax or possibly Jalapeno pepper, seeded, rough chop
  • 2 x Bay leaves, fresh
  • 4 x Basil Leaves, fresh Or possibly
  • 1 Tbsp. Dry basil flakes
  • 1/2 tsp Salt
  • 1/4 tsp Pepper, black, freshly grnd
  • 1 1/2 Tbsp. Hungarian paprika
  • 3 med Ripe red tomatoes, minced 1/4"
  • 1/2 c. Vegetable Oil
  • 10 x 6" dia corn Tortillas, *
  • 1 med Haas Avocado, peeled and sliced
  • 1 c. Monterey jack cheese, grated
  •     Lime or possibly lemon juice, freshly squezed
