  • 3 Tbsp. Butter
  • 1/2 x Onion, chopped
  • 4 x Garlic cloves, chopped
  • 2 x Pasilla chilies, stemmed, seeded, and torn into pcs
  • 2 c. Chicken stock
  • 1 x Chipotle chile in Adobo sauce
  • 1 Tbsp. Adobo sauce
  • 1 lb Shiitake mushrooms, stems removed and minced
  • 1 Tbsp. Finely minced fresh sage
