5 large eggs
1 1/2 cups cups half & half plus ½ milk OR
1 cup half & half plus 1 cup skim milk
1/2 cup fine cornmeal
1 cup part-skim ricotta cheese
2 teaspoons kosher salt
1 teaspoon dried thyme
1 teaspoon freshly ground pepper
1 cup shredded cheddar or Gruyere or Swiss cheese, divided
3 tablespoons grated Parmesan-Romano cheese blend
