Tuna With A Soy, Ginger And Chilli Glaze With Bok Choi

Ingredients

Ingredients For the tuna
  • 4 x 350g/12oz tuna steaks

  • salt and freshly ground black pepper

  • 2 tbsp sunflower oil

  • 6 tbsp dark soy sauce

  • 4 tbsp balsamic vinegar

  • 1 garlic clove, finely chopped

  • 2½cm/1in piece fresh root ginger, very finely chopped

  • 1 medium hot red chilli, seeds removed, finely chopped

  • 4 fresh coriander springs, to garnish

For the bok choi and sauce
  • 450g/1lb small heads bok choi, halved lengthways

  • ½ tsp toasted sesame oil

  • 2½cm/1in piece fresh root ginger, very finely chopped

  • ¼ tsp salt

  • 1 tsp cornflour

  • 1 tsp water

For the shallots
  • 2 small shallots, finely sliced into rings

  • 4-6 tbsp olive oil
