Ingredients

  • 700g/1½lb stewing steak, cut into large chunks

  • 225g/½lb beef kidneys, cut into large chunks

  • seasoned flour, for dusting

  • vegetable oil, for frying

  • 175ml/6¼fl oz red wine or Madeira wine

  • 1 onion, chopped

  • 100g/3½oz button mushrooms, halved

  • 1 bay leaf

  • 1 tsp Worcestershire sauce

  • 500ml/18fl oz beef stock

  • salt and freshly ground black pepper

For the crust
  • 225g/8oz plain flour, plus extra for dusting

  • 2 tsp baking powder

  • 115g/4¼oz suet

  • 25g/1oz fresh breadcrumbs

  • ½ tsp salt

  • 300ml/10½fl oz water

  • butter, for greasing

For the onion gravy
  • 2 tbsp vegetable oil

  • 1 large onion, sliced

  • 200ml/7fl oz red wine

  • 100ml/3½fl oz beef stock

  • 1 tsp French mustard

  • salt and freshly ground black pepper
