Langoustine And Avocado 'cocktail' With Basil Mayonnaise

Ingredients

  • 12-16 langoustines

  • 2 tbsp chopped basil

For the homemade mayonnaise
  • 1 tsp white wine vinegar

  • 1 tsp smooth Dijon mustard

  • salt and freshly ground black pepper

  • 2 free-range egg yolks

  • 200ml/7fl oz vegetable oil

  • 100ml/3½fl oz olive oil

For the avocado layer
  • 1 ripe avocado, peeled and chopped

  • 1 tsp finely chopped shallot

  • 1 tsp finely snipped chives

  • 1 tbsp lemon juice

  • salt and freshly ground black pepper

For the cherry tomato vinaigrette
  • 2 tbsp sherry vinegar

  • ½ tsp smooth Dijon mustard

  • pinch of sugar

  • salt and freshly ground black pepper

  • 120ml/4fl oz extra virgin olive oil

  • 8 cherry tomatoes, very finely chopped

  • 1 tsp very finely chopped shallot

For the homemade chips
  • groundnut oil, for frying

  • 1 long ratte potato, or other similar small firm salad potato, sliced thinly on a mandolin

  • salt and freshly ground black pepper

To garnish
  • 6 quails' eggs, boiled for 2½ minutes, peeled and quartered

  • mixed salad leaves
