  • 1 Tbs unsalted butter
  • 1 cup corn kernels, fresh or frozen
  • 1 cup all-purpose flour
  • 1/3 cup sugar
  • 2 tsp baking powder
  • 3/4 tsp salt
  • 1 cup stone-ground yellow corn meal
  • 1 cup milk
  • 1 large egg, lightly beaten
