- 2 tablespoons smashed garlic - about 6-8 cloves
- 1 bunch of green onions
- 1 lb. boneless, skinless chicken breast cut into bite-sized chunks
- 1 cup ground peanuts, divided
- 1/2cup soy sauce
- 1/2 cup fish sauce
- 1/4 cup packed brown sugar
- 1 tsp. ground red pepper
- 1 tsp. chili powder
- 6 eggs
- 1/2 cup water
- 4 cups fresh bean or soy sprouts, divided
- 2 1/2 cups roughly chopped or hand-torn cilantro, divided
- 1 lime, cut into wedges
