Ingredients

1 cup fresh squeezed lime juice
1 lb sea scallops,muscle removed, cut in 1/4
1 medium tomato, seedless & finely chopped
1/2 cup mango, cubed
1/2 cup peach, cubed
2 tbsp orange juice
1/2 small red onion
1 jalapeno pepper, finely chopped
1 tsp fresh cilantro, freshly chopped
1 tsp minced Garlic or 2 cloves Garlic minced
1 tsp Adobo all-purpose seasoning
1 tbsp olive oil
Guacamole for garnish
