Ingredients

  • 4 cups cubed French or peasant bread (1-inch cubes)

  • Salt and freshly ground black pepper, to taste
  • 3 red onions, cut into 1/2-inch-thick slices
  • 8 ripe plum tomatoes
  • 2 cucumbers, peeled, halved lengthwise, seeded, and cut into 1-inch pieces (about 2 cups)
