  • Olive oil

  • 1 medium carrot, finely diced
  • 1 or 2 bunches of sturdy greens such as kale, collards, or mustard greens
  • 1 medium-sized red onion, finely diced
  • 1/4 teaspoon red pepper flakes
  • 1/2 pound penne or other short pasta
  • Freshly ground black pepper to taste
  • Freshly grated Parmesan or Romano cheese
