Three Great Vinaigrettes

Ingredients

  • Basic Vinaigrette:
  • 3 tablespoons white wine vinegar or lemon juice
  • 1 tablespoon water
  • 4 teaspoons dijon mustard
  • 1/2 cup neutral oil (such as canola)
  • 1/4 cup flavored oil (such as extra-virgin olive oil)
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper.
  • Soy Vinaigrette:
  • 2 tablespoons sherry vinegar
  • 2 tablespoons white vinegar
  • 1 tablespoon soy sauce
  • 4 teaspoons dijon mustard
  • 1/2 cup canola oil
  • 1 small shallot, finely minced (about 1 tablespoon)
  • 1 clove garlic, microplaned (about 1 teaspoon)
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper.
  • Toasted Almond Vinaigrette:
  • 1/3 cup toasted almonds, chopped into rough 1/8th-inch pieces
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon water
  • 1 tablespoons honey
  • 1 small shallot, finely minced (about 1 tablespoon)
  • 1 tablespoons chopped herbs (parsley, tarragon, or basil work well)
  • 1/2 cup canola oil
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper.
