Ingredients

  • 8 slices bacon
  • 1 1/2 cups grated sharp white cheddar cheese (4 ounces)
  • 1/2 cup sour cream
  • 1 small yellow bell pepper, cut into 1/4-inch dice
  • 2 scallions, white and pale-green parts only, thinly sliced
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon dry mustard
  • Coarse salt and freshly ground black pepper
  • Pinch of cayenne pepper
  • 2 large eggs, separated
  • 2 tablespoons vegetable oil, plus more if necessary (optional)
