Yellow Rice and Fish Fillets Veracruz
Ingredients
- 1 avocado, peeled and finely diced
- 1 tomato, diced (about cup)
- cup sliced green onions
- 2 tablespoons lemon juice
- 2 teaspoons vegetable oil
- teaspoon hot pepper sauce
- teaspoon salt
- 1 pounds fillets (cod, sole, or halibut)
- 2 teaspoons butter or margarine, melted
- salt and ground black pepper
Yellow rice
Edit
- enough rice to make 2 cups cooked
- replace water with chicken broth
- pinch of saffron or teaspoon turmeric
