- 4 Tbs. olive oil
- 2 lb. yellow onions, thinly sliced
- 1/2 tsp. sugar
- 1/2 tsp. salt
- 1 1/2 Tbs. all-purpose flour
- 2 quarts beef stock, homemade (see related recipe at left) or purchased
- 1/2 cup dry white wine
- 1 tsp. freshly ground pepper
- 12 to 16 French bread slices, each 1/2 inch thick
- 3 garlic cloves, halved
- 1/2 lb. Gruyère cheese, shredded
Description
The Onions Can Be Caramelized A Day Ahead. Let Cool To Room Temperature, Then Transfer To An Airtight Container, Cover And Refrigerate Until You Are Ready To Finish The Soup.
